When I was growing up in Texas, my family, friends and I would always go to Ninfa's, a delicious Mexican restaurant in Houston. I used to be a very picky eater and all I would get at a Mexican restaurant was cheese enchiladas. I have definitely expanded my palate above and beyond what it used to be. The other thing I was obsessed with at Ninfa's was their green sauce. It was to die for and I still crave it to this day, which is why I decided to make my own healthier version! I love making this dessert recipe for cooking demos around town. It is great because it is a dessert but has unusual, healthy ingredients and seriously tastes like cookie dough! I like encouraging participants to try new things because they never know what they might like! It always turns out amazing! Sometimes I make the recipe into balls and sometimes I make it into a dip with just a few small changes. I have been wanting to make this with raisins instead of chocolate chips and adding more oats because I love raw oatmeal cookie batter! Servings: 16

While at home one day, I was watching Guy’s Grocery Games and their challenge was to make a burger. Somebody chose to do a Banh Mi Turkey Burger and it looked delicious and I craved one ever since. I went to the grocery store last weekend and bought several different types of vegetables without really thinking about what I was going to do with them. I created noodles with the eggplant, added other vegetables, and topped it off with spinach pesto. I was very impressed with this dinner and I would definitely make it again. The “noodles” were very similar to that of fettuccine and had about the same texture. Try using a marinara sauce to save on the calories and fat. Up to you on how you want to try it out! Servings: 2

I love pulled pork sandwiches, they remind me of when I lived in Texas! This recipe is for the actual pulled pork…I put it on gluten-free buns, added a vinegar and oil based coleslaw on top and topped it off with slices of pepperoncini peppers. I served this with green beans almondine (green beans, slivered almonds, coconut oil and lemon juice). I think we ended up making 10 sandwiches with this recipe, 3 days worth of pulled pork enchiladas and a pulled pork pizza...so it makes a lot! Enjoy the recipe! These were amazing! They were just what I was looking for and were surprisingly easy to make. Serves: at least 20 sandwiches
