This chicken was very tender with a slightly sweet orange taste. It paired great with broccoli and baked potato chunks. We saved the leftover chicken and chopped it up with asparagus and tossed it into some quinoa for dinner the next night. Servings: 4

I am not a huge fan of pasta but I love spaghetti sauce. This recipe is perfect because the squash takes the place of noodles and is very quick and easy to make! Normally I like to make my own sauce but when you are in a hurry for a quick meal, a store bought jar of spaghetti sauce will work. Aldi has a low-salt added kind of sauce that I love and always use now. I love the texture of spaghetti squash and how it actually looks like spaghetti noodles…I don’t miss the pasta at all and it is a great way to eat more vegetables! Servings: 4

My husband Josh is an amazing person. He is also a wonderful cook…it can’t get any better than that!
