Rice Cake Fruit Pizza

This is a super easy, fun snack that you or your kids can make when looking for something filling and sweet to eat. It's naturally gluten-free and dairy-free (if you buy the allergen-free chocolate chips) but full of flavor! If you don't like rice cakes, then you can do this with a 100% whole-grain or gluten-free English muffin, pita bread or even a waffle, instead.

Ingredients
  • 1 brown rice cake
  • 1 Tbsp peanut butter, no salt, sugar or oil added
  • 1/4 cup blueberries or raspberries
  • 1 Tbsp chocolate chips
 
Directions
  1. Top the rice cake with peanut butter, blueberries and chocolate chips.

Salmon with Vegetables

Some days I feel like I need a super healthy, basic, easy dinner. This meal has complex carbs, vegetables, lean protein and healthy fat, plus it comes together in about 25 minutes. Can't beat that!
Salmon with Vegetables, gluten free and dairy free recipes by Elena McCown, LLC a health coach in Franklin, TN
Total Time: 25 minutes
Serves: 4
 
Ingredients
  • 4 4oz salmon fillets
  • 2 cups cauliflower
  • 2 cups cherry tomatoes, cut in half
  • 3 Tbsp olive oil
  • ½ lemon or 2 Tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Pinch of salt and pepper
  • 2 cups raspberries
  • 1 cup quinoa, uncooked (cooked and prepared according to package directions)
 
Directions
  1. Preheat oven to 400 F.
  2. Lightly grease a foil lined baking sheet and put cauliflower on one side and tomatoes on the other side.
  3. Mix together the olive oil, lemon juice and spices and drizzle half over the vegetables and mix them around to get them covered.
  4. Put the vegetables in the oven and start preparing the salmon.
  5. Place the salmon skin side down on a lightly oil sprayed foil lined baking sheet.
  6. Drizzle salmon with remaining olive oil, lemon and spice mixture, transfer to the oven and cook until it flakes easily, about 10-12 minutes. Remove vegetables along with the salmon.
  7. Serve salmon with the tomatoes and cauliflower over the quinoa.
  8. Eat with 1/2 cup raspberries each serving.

Spice is Nice Virtual Cooking Class

Spice is Nice Virtual Cooking Class, shrimp curry and raita with a spiced mule cooked live with Elena McCown, LLC a health coach in Franklin, TN, gluten-free, dairy-free and can be made vegan
​Keep calm and CURRY on, it's time for another virtual cooking class!

Join us on Saturday, October 24 from 5:00pm - 6:30pm (CDT) via Zoom to add some spice to your life!

We will be making:
Shrimp Curry with Sweet Potatoes - a spicy curry dish with veggies and coconut milk served over sweet potatoes (can be made gluten-free, dairy-free and/or vegan)
Raita Dip - a yogurt based dip with cucumbers and fresh herbs to cool your palate, served with naan
(can be made gluten-free, dairy-free and/or vegan)
Spiced Mule - a Moscow Mule with a spicy fall twist

$20 per household. Follow me on

We are partnering with Savory Spice in Franklin, TN who is so generously donating the spice mixes so you can pick-up your spices from them instead of searching for everything at the store! More information will be sent to you after you register, if you register before 10/19/2020.

In consideration of being permitted by Elena McCown, LLC to participate in a virtual cooking class, I hereby waive, release and discharge any and all claims for damages or personal injury, death, or property damage which I may have or which may hereafter accrue as a result of my participation in said activity. This release is intended to discharge, in advance, Elena McCown, LLC, its officers, directors, members and managers, and all other members of its virtual cooking school staff whether contracted, employed or related, from and against any and all liability arising out of or connected to in any way with any participation in said activity. I understand that the activity that I am participating in may be of a hazardous nature and/or include physical and/or strenuous activity, that serious accidents occasionally occur during the said activity; and that participants in the said activity can occasionally sustain personal injuries as a consequence thereof. I also recognize that all people react to food differently and I will avoid the foods that I know I am allergic to and will ask for substitutions when necessary. Knowing the risks involved, nevertheless, I have voluntarily applied to participate in said activity, and I hereby agree to assume any and all risks of injury or death and to release and hold harmless Elena McCown, LLC, its officers, directors, members and managers, and all other members of its cooking school staff whether contracted or employed, or related, who might otherwise be liable to me. I further understand and agree that this waiver, release and assumption of risks is to be binding on my heirs and assigns. I hereby grant Elena McCown, LLC all rights and consent to copyright, use, re‐use, publish or re‐publish, copy, exhibit or distribute all photographs I have posted of the food I created to be used for Elena McCown, LLC website, social media, and any educational, training or promotional electronic or printed material without restriction as to frequency or duration of usage and without compensation. By agreeing to this waiver by clicking BuyNow, I acknowledge that I have carefully read this Hold Harmless Agreement, Waiver and Release and fully understand its contents. I am aware that this is a release of liability and a contract between myself and Elena McCown, LLC and any staff member of cooking class whether contracted or employed, or related.

    I am a food loving, activity seeking health coach who resides in Franklin, TN with my husband and two sweet dogs (Lola & Penny).

    Allergies

    I believe everyone should eat balanced and not cut food groups if you don't medically need to. All foods can fit in a healthy diet. Unfortunately, I have to avoid gluten and also limit myself with dairy, so my goal is to provide healthy, gluten-free/dairy-free recipes so EVERYONE can enjoy all foods, even if you do have to cut out certain food groups. My recipes are encouraged for everyone to eat, not just for those with sensitivities/allergies! Most of my recipes can be easily converted by using real dairy and whole-wheat in place of my allergy-free substitutes.
