I love pulled pork sandwiches, they remind me of when I lived in Texas! This recipe is for the actual pulled pork…I put it on gluten-free buns, added a vinegar and oil based coleslaw on top and topped it off with slices of pepperoncini peppers. I served this with green beans almondine (green beans, slivered almonds, coconut oil and lemon juice). I think we ended up making 10 sandwiches with this recipe, 3 days worth of pulled pork enchiladas and a pulled pork pizza...so it makes a lot! Enjoy the recipe! These were amazing! They were just what I was looking for and were surprisingly easy to make.
Serves: at least 20 sandwiches
Prep/Total Time: 14 hours

I believe everyone should eat balanced and not cut food groups if you don't medically need to. All foods can fit in a healthy diet. Unfortunately, I have to avoid gluten and also limit myself with dairy, so my goal is to provide healthy, gluten-free/dairy-free recipes so EVERYONE can enjoy all foods, even if you do have to cut out certain food groups. My recipes are encouraged for everyone to eat, not just for those with sensitivities/allergies! Most of my recipes can be easily converted by using real dairy and whole-wheat in place of my allergy-free substitutes.
