I. Love. Sushi. I especially like to eat a lot of it…which is hard to do because good sushi restaurants are usually pretty expensive per roll. My brother-in-law made sushi one time and I got hooked and bought a sushi kit myself and learned how to properly make the rice…the most important part. After many, many tries I finally came up with the perfect ratio. I am going to give you the sticky rice recipe but the fillings are up to you! In the pictures I have many different fillings- salmon, cream cheese, crab, mango, jalapeno…and probably a few other that I can’t remember. I had been telling my friends from work about how I loved to make sushi so I finally had them over to try it out. I also served the sushi with some edamame and one of my guests brought saki. Unfortunately the sodium content is very high in sushi and the best rice for the job is white…just make sure to drink a lot of water and have more potassium than normal to flush the salt out. One day, Josh and I were invited over to our friends house for a BBQ. I was in charge of dessert, of course. I wanted to bring something light that would compliment a fresh BBQ meal. I knew I wanted to go with something fruity so I thought of my two favorite fruits, mango and blueberries and decided to make a cobbler. The picture doesn’t do it justice, but it tasted AMAZING. Definitely something I will make more often, especially during the summer! It is low calorie and low sugar which is great, especially considering a serving was a quarter of the pan! Servings: 6

Oatmeal cookies are my favorite type of cookie and you can't beat adding blueberries, white chocolate chips and macadamia nuts! I think these might be my new ultimate favorite cookie. Also, just buy using oats, to keep them extra oaty, they are naturally gluten-free, also a plus! Servings: 48

Oh. My. Gosh. I love this stuff. It is very addicting. It is my favorite thing to eat when I go to Chuys or Hula Hut but it makes me feel sick because it is so creamy and rich (dairy). I came up with a solution…Homemade VEGAN Chuys Jalapeno Ranch Dip. My parents came in this past weekend and instead of going out to eat for dinner I decided it would be nice to stay in. I served 3 different types of salsa with blue corn tortilla chips for everyone to munch on while Josh and I prepared dinner. We made a healthy shrimp salad and topped it with this dip…what a hit! No one knew it was vegan, but everyone loved it! Try it for yourself and let me know what you think! It can also be made with regular Greek yogurt if you don't want it to be vegan. This dip is great and WAY less calories and fat and you can eat a bigger serving versus the restaurant dip. Servings: 10 (1/4 cup servings)

These cookies are quick and easy to make and taste very sweet for not too much sugar! They remind me of lara bars, especially after storing them overnight in the fridge. These would be perfect to take on a bike ride or run! Servings: 12
