I made falafel but I didn’t want to eat it on it’s own so I threw it in a salad and added homemade tzatziki sauce…yum! When making it be sure to thoroughly dry the beans and all of the other ingredients so it doesn’t get too wet to form the balls. Servings: 5

Spinach-Artichoke is such a great dip, yet unfortunately, it is always full of fat and calories. I decided to make a healthier pasta version that I could eat for my lunches for the week. I used gluten-free pasta shells, but you can use whatever kind of pasta that you prefer! I also don't normally eat dairy, so you can replace my dairy alternatives with a regular dairy version if you do. Servings: 8
