Chicken, Apple and Brie Salad

​I got the idea for this salad from an awesome sandwich I had in Colorado once. So keep in mind, if you don’t like salad, you can also eat this with the ingredients on a sandwich instead.
Chicken, Apple and Brie Salad
​Servings: 2
Prep/Total Time: 40 minutes

Ingredients:
  • 1 bag mixed greens (about 4 oz) or butter lettuce (my favorite)
  • 8 oz chicken breast 
  • 2 oz Goat Milk Brie, chopped up small (or your favorite vegan or regular cheese)
  • 1 apple, chopped up
  • 2 Tbsp tortilla strips
  • 1/4 cup fruit-sweetened fig jam
  • 2 Tbsp balsamic vinegar
  • Water, to thin down the jam
  • salt and pepper to taste
  • cinnamon to taste

Directions:
  1. Sprinkle the salt and pepper on the chicken and bake at 375 degrees for about 20-30 minutes, or until no longer pink.
  2. Put the apple pieces in a small bowl with a Tbsp of water and cinnamon and cook in the microwave for one minute.
  3. Dice the chicken into chunks.
  4. Place salad greens on a large plate and top with chicken, brie, apple and salad topper.
  5. Mix the jam with balsamic vinegar and water until it is at a good salad dressing consistency and put on top of the salad.

    Allergies

    I believe everyone should eat balanced and not cut food groups if you don't medically need to. All foods can fit in a healthy diet. Unfortunately, I have to avoid gluten and also limit myself with dairy, so my goal is to provide healthy, gluten-free/dairy-free recipes so EVERYONE can enjoy all foods, even if you do have to cut out certain food groups. My recipes are encouraged for everyone to eat, not just for those with sensitivities/allergies! Most of my recipes can be easily converted by using real dairy and whole-wheat in place of my allergy-free substitutes.
