Quinoa Veggie Burger

While I still love burgers and eat meat, sometimes it is refreshing to eat vegetarian every once in a while! These are a great burger substitute. I like to eat mine as a lettuce wrap! 
Quinoa Veggie Burger
​Servings: 4
Prep/Total Time: 45 minutes 

Ingredients:
  • 1/2 cup uncooked quinoa
  • 1 carrot, diced
  • 4 scallions, sliced
  • 2 cloves garlic
  • 15 ounces can black beans, drained and rinsed
  • 1/2 cup oat flour
  • 1 large egg, lightly beaten
  • dash of salt
  • ½ tsp pepper
  • 4 oz cheese if so desired (I use goat cheese or almond milk cheese)

Directions:
  1. Pre-heat the oven to 350 F.
  2. Cook quinoa according to the package; set aside.
  3. In a food processor, pulse carrot until finely chopped. Add cooked quinoa, carrot, scallions, garlic, beans, oat flour, egg, salt, and pepper; pulse until combined but still slightly chunky.
  4. Form mixture into four patties and place on ungreased baking sheet.
  5. Bake for about 8 minutes on each side.
  6. I grilled mine after that just because I had prepared them earlier in the day and had to do that to heat them up, plus it made it seem like a real burger!

    Allergies

    I believe everyone should eat balanced and not cut food groups if you don't medically need to. All foods can fit in a healthy diet. Unfortunately, I have to avoid gluten and also limit myself with dairy, so my goal is to provide healthy, gluten-free/dairy-free recipes so EVERYONE can enjoy all foods, even if you do have to cut out certain food groups. My recipes are encouraged for everyone to eat, not just for those with sensitivities/allergies! Most of my recipes can be easily converted by using real dairy and whole-wheat in place of my allergy-free substitutes.
