Yes, you read that right…spinach granola bars…and they are fantastic! I am always looking for new breakfast ideas and decided I wanted to make granola bars but wanted to have some sort of vegetable. These might look a bit strange being green and all but I just taste the honey in them! Great for breakfasts on the go. I cut and froze them so I could take a few out and let them thaw overnight to grab in the morning and pair with my coffee. I cut them in to 12 pieces (good for a snack) but for a more filling breakfast I will eat 2. Servings: 6
