As I trained for my 100 mile bike ride a while back (Austin, TX to Shiner, TX) I realized a lot of cyclists use their long rides as an excuse to eat a lot of junk…chips, cookies, candy, drinks with tons of sugar or fake sugar, etc. I ride to be healthy and stay in shape, not to ride and then ruin it with food that is not good for me! I decided to make my own food to bring with me on my ride that would fuel me properly (the right amount of calories, fat, carbs, protein, and electrolytes). I had been bringing Larabars with me but they are so expensive so I decided to make my own. I love lemon and feel like it is a light, refreshing taste to have during my ride so I made lemon balls to bring with me. The cashews provide the protein to keep me satisfied, the dates bring the carbs, potassium, calcium, magnesium and phosphorus and the added salt of course is the sodium. Perfect! Easy to bring along in little baggies, tastes delicious and is actually natural and healthy fuel! Servings: 10

While I try not to consume too much added sugar, sometimes it is fun to have a little treat. I made these for a friends birthday and while they are still generally healthy, they do contain coconut sugar. Coconut sugar is really just sugar, but it is supposed to have a lower glycemic index than refined sugar; it looks and tastes like brown sugar though and it doesn't make food super sweet as refined does. I was very pleased with these muffins and I think they would make a great treat for kids, or a grab and go breakfast! While all of my recipes are gluten-free, you can still usually replace my gluten-free items/ingredients with whole-wheat flour, etc. Make note: If you DO want them to be gluten-free, make sure you purchase gluten-free oats/gluten-free oat flour. I love making my breakfast for the week on Sundays, it makes the mornings sooo much easier. I know that no matter how much of a hurry I am in, I can grab this out of the fridge, heat it up and have a nice hearty meal to start my day. This was a great recipe since it was easy to throw together in a casserole dish and had a great mix of carbs, protein and fat. I really like quinoa because it is a complete protein, but is not a meat…obviously. It keeps me full until lunch time and adding some Tabasco to it really makes my day. I have also found that by not eating anything sugary for breakfast I don’t crave anything sweet later in the day. I don't normally eat dairy (except for goat products) so if you want to replace the dairy substitute, you can use cottage cheese! Servings: 6

I love donuts, but since I can't eat a normal donut since they are made with flour, I end up making my own. I am ok with that since that means I know what goes in them and I bake them instead of frying them.
