Strawberry Peanut Butter Crepes

Crepes are such a fun and delicious breakfast food. I like that they can be sweet or savory. These kept me full for hours! Such a fun take on a breakfast peanut butter and jelly sandwich.
Strawberry Peanut Butter Crepes
​Servings: 2 (2 crepes each)
Prep/Total Time: 20 min

Ingredients:
  • 1 egg
  • 1/2 cup gluten-free flour (can use regular flour or almond flour)
  • 1 Tbsp coconut oil
  • 1/4 cup unsweetened vanilla pea milk (or your favorite milk/milk replacement)
  • 1/4 cup water
  • pinch of salt
  • 1/4 cup pure maple syrup
  • 7 whole strawberries, finely chopped
  • 2 Tbsp peanut butter

Directions:
  1. Whisk together egg, milk, water, melted coconut oil and salt until well blended, then add flour and whisk until smooth.
  2. Mix together the strawberries and syrup.
  3. Heat a medium size skillet over medium-high heat, spray with olive oil, then pour 1/4 cup of crepe mixture into the center of the pan.
  4. Spread the mixture by rotating and twisting the pan in a circular motion, then let the crepe cook for about 2 minutes or until the bottom is brown, flip, and cook until brown on the other side.
  5. On each crepe top with 1/4 of the peanut butter, roll and then top with the strawberry syrup!

    Allergies

    I believe everyone should eat balanced and not cut food groups if you don't medically need to. All foods can fit in a healthy diet. Unfortunately, I have to avoid gluten and also limit myself with dairy, so my goal is to provide healthy, gluten-free/dairy-free recipes so EVERYONE can enjoy all foods, even if you do have to cut out certain food groups. My recipes are encouraged for everyone to eat, not just for those with sensitivities/allergies! Most of my recipes can be easily converted by using real dairy and whole-wheat in place of my allergy-free substitutes.
