Spinach Granola Bars

​Yes, you read that right…spinach granola bars…and they are fantastic! I am always looking for new breakfast ideas and decided I wanted to make granola bars but wanted to have some sort of vegetable. These might look a bit strange being green and all but I just taste the honey in them! Great for breakfasts on the go. I cut and froze them so I could take a few out and let them thaw overnight to grab in the morning and pair with my coffee. I cut them in to 12 pieces (good for a snack) but for a more filling breakfast I will eat 2.
Spinach Granola Bars
​Servings: 6
Prep/Total Time: 30 minutes

Ingredients:
  • 2 cups gluten-free oats, divided
  • 1 Tbsp cinnamon
  • 1 cup spinach puree (about 3 cups fresh in the food processor)
  • 1/3 cup raw wild honey
  • 1 tsp vanilla
  • 1/3 cup slivered almonds
  • 1/3 cup raisins, no sugar added

Directions:
  1. Pre-heat the oven to 300 F. 
  2. Place 1/2 cup of your oats into a food processor and process until oats have reached a flour-like consistency.
  3. In a large mixing bowl, combine the remaining dry ingredients (except for the raisins) and toss the ingredients until all are well incorporated.
  4. In another mixing bowl, combine the wet ingredients and whisk until smooth and add to dry ingredients.
  5. Stir until dry ingredients are mixed into the wet ingredients and carefully fold in your almonds and raisins.
  6. In a 9×9 baking pan lined with parchment paper transfer the granola bar mixture into the pan. Using your hands, press the granola mixture into the pan so it is even.
  7. Bake for 25 minutes. Let cool completely before cutting into 12 bars.

    Allergies

    I believe everyone should eat balanced and not cut food groups if you don't medically need to. All foods can fit in a healthy diet. Unfortunately, I have to avoid gluten and also limit myself with dairy, so my goal is to provide healthy, gluten-free/dairy-free recipes so EVERYONE can enjoy all foods, even if you do have to cut out certain food groups. My recipes are encouraged for everyone to eat, not just for those with sensitivities/allergies! Most of my recipes can be easily converted by using real dairy and whole-wheat in place of my allergy-free substitutes.
