Veggie Tuna Salad

I love tuna and like to keep my tuna salads interesting! This has a delicious creamy texture and is great served on your favorite crackers, on a bed of lettuce, in a wrap or as a sandwich! I like pairing it with a can of low-sodium tomato juice and a bunch of grapes to round out my meal. It is easy to make ahead and keep in the fridge for lunches for the week.
Veggie Tuna Salad
  • ​Servings: 5
  • Prep/Total Time: 5 minutes

  • Ingredients:
  • 5 2oz cans tuna in water
  • 1/2 red bell pepper, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 1 large jalapeno, finely chopped
  • 2 avocados, de-pitted
  • 1 bunch green onions, finely sliced
  • 5 Tbsp red wine vinegar
  • 4 Tbsp lime juice
  • 3 Tbsp black pepper
  • 1 Tbsp cayenne pepper
  • 1 container mini cherub tomatoes, halved
  • Crackers/lettuce/tortilla/bread, whichever you choose to serve it with

  • Directions:
  • Mush everything together in a large bowl.
  • Fold in the tomatoes.
  • Separate into 5 containers for the week.

The veggie tuna salad is perfect for a quick snack. It is easy and convenient to do since it requires minimal ingredients and procedures. Using healthy ingredients to make this will make us want to consume more. Healthy foods are being eaten more by many today because of wanting to have a healthy lifestyle. Making a snack doesn't need to be exquisite, we just need to be creative and use certain ingredients to make it tasteful and satisfy our cravings.

    Allergies

    I believe everyone should eat balanced and not cut food groups if you don't medically need to. All foods can fit in a healthy diet. Unfortunately, I have to avoid gluten and also limit myself with dairy, so my goal is to provide healthy, gluten-free/dairy-free recipes so EVERYONE can enjoy all foods, even if you do have to cut out certain food groups. My recipes are encouraged for everyone to eat, not just for those with sensitivities/allergies! Most of my recipes can be easily converted by using real dairy and whole-wheat in place of my allergy-free substitutes.
