Thanksgiving Dinner Menu: Turkey

Thanksgiving Dinner Turkey with gluten-free and dairy-free recipes by Elena McCown, LLC a health coach in Franklin, TN
Total Time: 4 hours
Serves: 8
 
Ingredients
  • 12 lb Turkey, completely thawed and at room temp.
  • 4 Tbsp olive oil
  • 1 Tbsp salt
  • 2 tsp ground black pepper
  • 1 granny smith apple, chopped in large pieces
  • 1 navel orange, unpeeled, cut into sections
  • 1 yellow onion, quartered
  • 1 bunch fresh rosemary, whole
  • 1 bunch fresh sage, whole
  • 1 bunch fresh thyme, whole
 
Directions
  1. Preheat oven to 325F.
  2. Remove the giblets from inside the turkey and discard.
  3. Place turkey, breast side down on a roasting rack in a roasting pan.
  4. Stuff the apple, orange, onion and fresh herbs into the cavities of the turkey. Firmly press the skin in around the cavities to keep everything in.
  5. Bend the wings back to stabilize the turkey.
  6. Rub the turkey all over with oil and season with the salt and pepper.
  7. Insert a meat thermometer into the turkey thigh and set to 165F.
  8. Place the turkey in the center of the oven and cook until the internal temperature reaches a minimum of 165 degrees, approximately 3-4 hours.
  9. Once done, remove from the oven, cover with tin foil and let it rest for 30 minutes before slicing.

    Allergies

    I believe everyone should eat balanced and not cut food groups if you don't medically need to. All foods can fit in a healthy diet. Unfortunately, I have to avoid gluten and also limit myself with dairy, so my goal is to provide healthy, gluten-free/dairy-free recipes so EVERYONE can enjoy all foods, even if you do have to cut out certain food groups. My recipes are encouraged for everyone to eat, not just for those with sensitivities/allergies! Most of my recipes can be easily converted by using real dairy and whole-wheat in place of my allergy-free substitutes.
