Mexican Street Tacos

​I was asked to make a healthy version of Tacos de Tripas or Mexican Street Tacos. If you aren’t aware, tripas are intestines. To make these tacos healthy I decided to replace the intestines with pork tenderloin instead. Quick, easy and healthy Mexican food…always a plus! This is a really quick version when you are in a hurry! I served 2 tacos each to Josh and I with a side of sweet potato chips and salsa. It was a great meal to eat on Sunday before relaxing and preparing for the week ahead.
Mexican Street Tacos
​Servings: 2
Prep/Total Time: 20 minutes 

Ingredients:
  • 1/2 pound pork tenderloin, silverskin removed, chopped into bite size pieces
  • 1/2 sweet onion, chopped
  • 1/4 cup chunky salsa
  • 1/4 cup shredded cabbage
  • 2 radishes, thinly sliced
  • 1/4 cup cilantro, chopped
  • 4 home style corn tortillas
  • salt and pepper to taste

Directions:
  1. Cook pork, onion, salsa, salt and pepper in a greased frying pan until the meat is no longer pink.
  2. Heat tortillas in the microwave for 10 seconds and top with meat mixture, cabbage, radishes and cilantro.

    Allergies

    I believe everyone should eat balanced and not cut food groups if you don't medically need to. All foods can fit in a healthy diet. Unfortunately, I have to avoid gluten and also limit myself with dairy, so my goal is to provide healthy, gluten-free/dairy-free recipes so EVERYONE can enjoy all foods, even if you do have to cut out certain food groups. My recipes are encouraged for everyone to eat, not just for those with sensitivities/allergies! Most of my recipes can be easily converted by using real dairy and whole-wheat in place of my allergy-free substitutes.
