I was asked to make a healthy version of Tacos de Tripas or Mexican Street Tacos. If you aren’t aware, tripas are intestines. To make these tacos healthy I decided to replace the intestines with pork tenderloin instead. Quick, easy and healthy Mexican food…always a plus! This is a really quick version when you are in a hurry! I served 2 tacos each to Josh and I with a side of sweet potato chips and salsa. It was a great meal to eat on Sunday before relaxing and preparing for the week ahead.

My recipes are encouraged for everyone to eat, not just for those with sensitivities/allergies! Most of my recipes can be easily converted by using real dairy and whole-wheat in place of my allergy-free substitutes.
