One day, Josh and I were invited over to our friends house for a BBQ. I was in charge of dessert, of course. I wanted to bring something light that would compliment a fresh BBQ meal. I knew I wanted to go with something fruity so I thought of my two favorite fruits, mango and blueberries and decided to make a cobbler. The picture doesn’t do it justice, but it tasted AMAZING. Definitely something I will make more often, especially during the summer! It is low calorie and low sugar which is great, especially considering a serving was a quarter of the pan!

Unfortunately, I have to avoid gluten and also limit myself with dairy, so my goal is to provide healthy, gluten-free/dairy-free recipes so EVERYONE can enjoy all foods, even if you do have to cut out certain food groups. My recipes are encouraged for everyone to eat, not just for those with sensitivities/allergies! Most of my recipes can be easily converted by using real dairy and whole-wheat in place of my allergy-free substitutes.
