Flourless Peanut Butter S'mores Cookies

Since the 4th of July is tomorrow, I wanted to make a dessert that celebrates America. I couldn't think of anything better than the tradition of making s'mores around a campfire! I decided to take that idea and transfer it into a gluten-free cookie. Since gluten-free flour can sometimes be a little fickle, I decided to stick with my tried and true flourless cookie recipe using peanut butter as the base....because I mean come on, who doesn't love marshmallows, chocolate AND peanut butter? The cookies taste just like a traditional s'more but...with peanut butter! It even is sticky and messy and holds true to this campfire favorite. Make this cookie anytime you want to reminisce about the good ol' days - or celebrate America. 
Flourless Peanut Butter S'mores Cookies: gluten-free recipes by Elena McCown, LLC a health coach in Franklin, TN

Prep/Total Time: 45 minutes

Ingredients:
Filling
  • 2 cups peanut butter
  • 1/2 cup maple syrup
  • 1 Tbsp vanilla
  • 2 eggs
  • 1 tsp baking soda
  • 1/8 tsp salt
  • 1/8 tsp cinnamon
  • 1 cup chocolate chips
  • 2 cups mini marshmallows

Directions:
  1. Pre-heat the convection oven to 350 F (or conventional at 350 F).
  2. Top 2 large cookie sheets with parchment paper.
  3. In a large bowl, add the peanut butter, maple syrup, vanilla, eggs, baking soda, salt and cinnamon and mix everything together until well blended.
  4. Gently fold in the chocolate chips and marshmallows.
  5. Using your hands, smoosh together the dough and form medium sized balls to drop onto the cookie sheets about 2 inches apart.
  6. Place in the oven and bake for 9 minutes (or conventional oven for 12 minutes).
  7. Let cool on the cookie sheet completely. Place the cookie sheets in the freezer for 15 minutes before removing cookies from the sheet (this helps with them being so sticky). 
  8. Keep cookies in a container lined with parchment paper and do not overlap the cookies (again, because they will stick together).
  9. Store cookies in the fridge or freezer and remove about 15 minutes prior to eating them. Enjoy!

    Allergies

    I believe everyone should eat balanced and not cut food groups if you don't medically need to. All foods can fit in a healthy diet. Unfortunately, I have to avoid gluten and also limit myself with dairy, so my goal is to provide healthy, gluten-free/dairy-free recipes so EVERYONE can enjoy all foods, even if you do have to cut out certain food groups. My recipes are encouraged for everyone to eat, not just for those with sensitivities/allergies! Most of my recipes can be easily converted by using real dairy and whole-wheat in place of my allergy-free substitutes.
