Since the 4th of July is tomorrow, I wanted to make a dessert that celebrates America. I couldn't think of anything better than the tradition of making s'mores around a campfire! I decided to take that idea and transfer it into a gluten-free cookie. Since gluten-free flour can sometimes be a little fickle, I decided to stick with my tried and true flourless cookie recipe using peanut butter as the base....because I mean come on, who doesn't love marshmallows, chocolate AND peanut butter? The cookies taste just like a traditional s'more but...with peanut butter! It even is sticky and messy and holds true to this campfire favorite. Make this cookie anytime you want to reminisce about the good ol' days - or celebrate America. Servings: 36
