It is always nice to have quick meals to fall back on during busy weeks! This is one of them for us. Pasta is easy because you can always keep noodles on hand in the pantry, as well as a prepared tomato sauce or canned tomato sauce + tomato paste to make your own (lower sodium) version! You could even have veggies pre-cut and frozen and/or the turkey pre-cooked and frozen to make it even easier and faster. Find whatever works better for you for a quick and healthy meal. If you choose to start fresh, it still barely takes any time to throw together! It's not only delicious, way lower in sodium than any pasta/sauce you could buy from a restaurant or a store BUT it also contains 2 full servings of veggies in each serving! Plus, it is gluten-free but you would never know! If you are vegan/vegetarian, you can follow the same recipe and just enjoy it with the veggies! Servings: 8
