Crab Stuffed Portobello Mushrooms

These stuffed mushrooms are very filling and satisfying! Impress your friends by making these at a BBQ! You could also make mini versions to serve as an appetizer.
Crab Stuffed Portobello Mushrooms
​Crab Stuffed Portobello Mushrooms
Servings: 2
Prep/Total Time: 13 minutes

Ingredients:
  • 2 portobello mushrooms, stems and black parts removed
  • 2 Tbsp olive oil
  • 1 cup lump crab meat
  • 4 scallions, chopped
  • 1/8 tsp old bay seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp ground mustard
  • 1 Tbsp olive oil based reduced fat mayo
  • 1 Tbsp Nutritional Yeast or Parmesan cheese
  • 1 Tbsp gluten-free bread crumbs

Directions:
  1. Pre-heat the grill to medium/high.
  2. Pre-heat the oven to broil.
  3. Brush the olive oil over the mushrooms and grill for about 5 minutes on each side.
  4. Mix together the crab meat, scallions, seasonings and mayo.
  5. Mix together the Nutritional Yeast or Parmesan and gluten-free bread crumbs.
  6. Once the mushrooms are grilled, top with the crab mixture and then the bread crumb mixture and broil for about 3 minutes or until tops starts to brown.

    Allergies

    I believe everyone should eat balanced and not cut food groups if you don't medically need to. All foods can fit in a healthy diet. Unfortunately, I have to avoid gluten and also limit myself with dairy, so my goal is to provide healthy, gluten-free/dairy-free recipes so EVERYONE can enjoy all foods, even if you do have to cut out certain food groups. My recipes are encouraged for everyone to eat, not just for those with sensitivities/allergies! Most of my recipes can be easily converted by using real dairy and whole-wheat in place of my allergy-free substitutes.
