Rice Cake Fruit Pizza

Ingredients
  • 1 brown rice cake
  • 1 Tbsp peanut butter
  • ¼ cup blueberries
  • 1 Tbsp chocolate chips
 
Directions
  1. Top the rice cake with peanut butter, blueberries and chocolate chips.

Lemon Bar Energy Bites

Ingredients
  • 1 cup Medjool dates, pitted
  • 2 cups raw cashews
  • 2 tsp lemon juice
  • 1 tsp lemon zest
  • 1/8 tsp salt
 
Directions
  1. Add cashews, lemon juice, zest and salt into a food processor or blender and puree until it reaches a semi-fine texture.
  2. Add in dates and keep mixing until it starts to form together.
  3. Pinch off pieces of the mixture and roll into small balls.
  4. Store in a container in the fridge for up to 5 days.

Peanut Butter Cheerio Bites

Ingredients
  • 6 cups plain cheerios
  • 1 cup plain peanut butter
  • ½ cup honey
  • 1 tsp vanilla
 
Directions
  1. Pour the cheerios into a large bowl.
  2. In another bowl, microwave the peanut butter for 40 seconds. Take out, stir and add ½ cup honey and microwave for another 30 seconds.
  3. Add the vanilla, and mix until well-combined.
  4. Pour the peanut butter mixture over the cheerios and mix together well with a spoon until all the cereal pieces are coated.
  5. Spoon out bite sized spoonfuls and place on a sheet of greased aluminum foil.
  6. Let the pieces sit and solidify for about 3 hours. Store in a closed container.

Whole-Grain Chex Mix

Ingredients
  • 6 cups Rice Chex
  • 3 cups gluten-free cheese crackers
  • 3 cups Honey Nut Cheerios
  • 1 cup peanuts
  • 1 cup gluten-free pretzels
  • 1/3 cup olive oil
  • 4 tsp gluten-free Worcesterchire Sauce
  • ½ tsp seasoned salt
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 6 dashes Tabasco sauce
 
Directions
  1. Preheat oven to 250F and prepare two large baking sheets coated with cooking spray.
  2. In a large bowl, combine the cereals, crackers, nuts and pretzels.
  3. In a small bowl, combine the oil, Worcestershire Sauce, salt, garlic powder, onion powder and Tabasco (to taste).
  4. Pour the sauce over the cereal mixture and toss to coat.
  5. Transfer the mixture to the pans and bake for 1 hour, stirring every 15 minutes.
  6. Spread on paper towels to cool completely. Store in an airtight container and enjoy!
