Tuna Salad Sandwich

Ingredients
  • 16 oz chunk light tuna in water, rinsed and drained
  • 3 avocado, smashed
  • 3 stalks celery, chopped
  • 3 stalks green onion, chopped
  • 12 baby carrots, chopped
  • 1 Tbsp lemon juice
  • ½ tsp garlic powder
  • Dash of salt and pepper
  • 12 slices gluten-free  bread
  • 6 lettuce leaves
  • 3 medium tomatoes, sliced
  • 3 servings chips
  • 6 clementines
 
Directions
  1. Combine all ingredients in a large bowl (except bread, lettuce and tomato) and smash together until combined.
  2. Top bread with tuna salad, lettuce and tomato slices.
  3. Serve with a 1/2 serving of chips and 1 clementine each.
