1 can black beans no sodium, smashed to make refried beans
1 cup vegan cheese
2 cups spinach, chopped
1 can chopped green chilies
2 green onions, sliced
4 Tbsp salsa
On one tortilla, spread refried beans to within 1 in. of edges. Sprinkle with cheese; top with chilies, spinach, onions, another sprinkle of cheese and top with another tortilla. Repeat for the remaining 3 quesadillas.
On a lightly greased griddle, cook quesadillas over medium heat for 2-4 minutes on each side or until browned and cheese is melted. Cut into wedges. Serve with salsa and 1 apple each.
