  • 1 oz (20 nuts) Planters Deluxe Lightly Salted Mixed Nuts
  • 1 cup plain Cheerios
  • ½ cup raisins, unsweetened
 
Directions

Carrot Cake Oatmeal

Ingredients
  • ½ cup GF quick oats
  • 1 cup unsweetened vanilla pea milk
  • ¼ cup unsweetened applesauce
  • 1 Tbsp peanut butter
  • 1 carrot, grated
  • 2 Tbsp raisins
  • ½ tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp ground ginger
  • Dash of salt
 
Directions
  1. Combine all ingredients in a container that can be sealed.
  2. Stir well to combine and refrigerate overnight.
  3. Add more milk for a thinner consistency before eating if needed.
  4. Eat warmed up or cold!

Banana Pancakes

Ingredients
  • 2 ripe bananas, mashed
  • 1 Tbsp coconut oil
  • 1 Tbsp lemon juice
  • 2 tsp maple syrup
  • 2 eggs
  • ½ cup unsweetened pea milk
  • 1 cup oat flour
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • Dash of salt
  • 4 Tbsp maple syrup
  • 4 Tbsp peanut butter
 
Directions
  • In a small bowl, stir together the mashed bananas, coconut oil, lemon juice, maple syrup, egg and milk.
  • In a medium bowl, whisk together the oat flour, baking soda, salt and spices.
  • Mix the wet ingredients into the dry ingredients and stir until everything is thoroughly moistened.
  • Let the batter sit for 10 minutes while you heat and lightly oil a nonstick griddle over medium-low heat.
  • Once the surface of the pan is hot enough that a drop of water sizzles on it, pour small spoonfuls of batter onto the pan. Let the pancakes cook for about 3 minutes, until bubbles begin to form around the edges of each pancake.
  • Flip the pancakes with a spatula and cook for another 90 seconds or so, until golden brown on both sides.
  • Mix together the maple syrup and peanut butter (add a little milk for a thinner consistency if needed) and drizzle over the pancakes.

Avocado Egg Toast

Ingredients
  • 2 slices gluten-free bread
  • ½ avocado, sliced
  • 1 egg
  • Tabasco sauce
  • Dash of salt and pepper
  • 1/2 cup blueberries
 
Directions
  1. Toast your bread.
  2. While your bread is toasting, scramble an egg over medium heat on the stove.
  3. Top your toast slices with the egg, avocado, tabasco sauce and a dash of salt and pepper.
  4. ​Serve with 1/2 cup blueberries.

Blueberry Pie Oatmeal

Breakfast Sandwich

Ingredients
  • 6 eggs
  • 1 Tbsp olive oil
  • ½ small sweet onion, chopped
  • 1 8 oz package mushrooms, chopped
  • 3 cups spinach, chopped
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • Dash of salt
  • 6 gluten-free English muffins
  • 1 large tomato, sliced
  • 2 avocado, sliced
  • 3 cups raspberries
 
Directions
  1. Preheat oven to 375F and place parchment paper in a large baking sheet with a lip to line the entire pan.
  2. Heat olive oil in a large pan over medium heat and cook the onions for about 5 minutes. Add in the mushrooms and spinach and cook another 5 minutes.
  3. Whisk eggs in a large bowl and add the vegetables to the eggs. Season with garlic powder, salt and pepper.
  4. Pour egg mixture into prepared baking sheet to make a thin layer and bake for 20-30 minutes or until eggs are fully cooked.
  5. Broil English muffins with a slice of cheese on each in oven for a few minutes or until toasted and cheese melts.
  6. As the muffins are getting crispy, use a glass about the same size as the muffins and cut the eggs to fit them.
  7. Top the bottom English muffin with the egg circle and some of the leftover pieces of egg and then add tomato and avocado and the top half of the muffin.
  8. *These can be frozen by assembling without the avocado and tomato, wrapping in foil and then putting it in a freezer bag and placing in the freezer. When ready to eat, remove from foil and microwave for 60-90 seconds or place in the toaster until cooked through. Top with avocado and tomato and enjoy.
  9. Serve each with 1/2 cup raspberries.

Yogurt Parfait

Ingredients
  • 1 container Kite Hill plain Greek yogurt
  • 2 tsp honey
  • 1 tsp vanilla
  • 1 tsp ground cinnamon
  • ¼ cup unsweetened applesauce
  • ½ apple, chopped
  • 2 Tbsp walnuts, chopped
 
 
Directions
  1. In a medium bowl, add the yogurt, honey, vanilla and cinnamon and stir to combine.
  2. Layer with the applesauce and then the apples and walnuts on top.
  3. Sprinkle with a little extra cinnamon if desired.
